Make the pumpkin spice sugar. Combine the granulated sugar, cinnamon, and pumpkin pie spice in a shallow bowl. Set aside.

Prepare the cream cheese frosting. Beat the softened cream cheese, powdered sugar, and vanilla until smooth. Add the cream a little at a time until the frosting is thin enough to drizzle but still thick and creamy. Transfer to a piping bag or zip-top bag.

Make the pumpkin pie drizzle. Whisk together the pumpkin puree, powdered sugar, cream, pumpkin pie spice, and vanilla until completely smooth. It should have a pourable consistency. Add another teaspoon of cream if needed.

Heat the oil. Add about 2 inches of oil to a heavy saucepan or Dutch oven and heat to 350°F.

Fry the Hawaiian rolls. Carefully add 1-2 rolls at a time. Fry for about 10–20 seconds per side, turning as needed, until the outside is deep golden brown and slightly crisp. Because the rolls are already baked, you're only trying to crisp and warm them rather than cook them through.

Coat with pumpkin spice sugar. Remove the rolls from the oil and briefly drain on paper towels. While they're still hot, roll each one generously in the pumpkin spice sugar.

Add the cheesecake topping. Arrange three fried rolls on a plate or skewer to mimic the BoardWalk presentation. Drizzle generously with the cream cheese frosting.
