Pumpkin adds moisture to churro dough, so be sure to use plain pumpkin purée and measure it carefully. Too much can make the churros heavy and difficult to crisp. Keeping the oil around 350°F is also important. Oil that’s too cool produces greasy churros, while overly hot oil can brown the outside before the center cooks. I like to use a Candy Thermometer to ensure the oil is the correct temperature. A large star piping tip creates the classic ridges and gives the churros more crisp edges to hold onto that pumpkin spice sugar. For the best texture, coat and serve them while they’re still warm.

Disneyland Pumpkin Spice Churros Recipe

Crispy, golden churros coated in warm pumpkin spice sugar bring the flavors of fall at Disneyland straight to your kitchen.

Make the coating. Combine the granulated sugar, cinnamon, and pumpkin pie spice in a shallow bowl or a zip-top bag. Set aside.

Heat the oil. Pour about 2 inches of oil into a heavy-bottomed pot or Dutch oven. Heat to 350°F.

Make the dough. Add the water, butter, brown sugar, salt, pumpkin pie spice, and pumpkin purée to a medium saucepan. Bring to a gentle boil over medium heat, stirring until the butter melts.

Reduce the heat to low and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan, about 1–2 minutes.

Remove from the heat and allow the dough to cool for about 5 minutes. Stir in the vanilla.

Add the eggs one at a time, mixing thoroughly after each addition. At first the dough may look separated, but continue stirring until it becomes smooth, thick, and pipeable.

Transfer the dough to a sturdy piping bag fitted with a large open-star tip.

Fry the churros. Pipe 4- to 5-inch strips of dough directly over the hot oil, using kitchen scissors to snip the dough from the piping tip. Fry only a few at a time so the oil temperature stays close to 350°F.

Fry for approximately 2–3 minutes per side, turning as needed, until deep golden brown and crisp.

Transfer the churros to a paper-towel-lined plate for about 30–60 seconds. While they're still warm, toss them generously in the pumpkin spice sugar.
