They’re a fun fall treat that combines the classic flavor of freshly made beignets with everything you love about caramel apples.

Cooking Tips

Keep the frying oil as close to 350°F as possible. If the oil is too cool, the beignets can absorb too much oil; if it’s too hot, the outside may brown before the center cooks. A candy or deep-fry thermometer makes maintaining the correct temperature much easier.

Green apple candy flavoring gives the icing the strongest candied-apple flavor. Start with a small amount because concentrated flavorings can be very powerful. If you can’t find green apple flavoring, substitute a tablespoon of concentrated apple cider or apple juice, reducing the milk slightly so the icing doesn’t become too thin.

Make the Beignet Dough

  1. Add the warm water to a large mixing bowl. Stir in the yeast and 1 tablespoon of the sugar. Let the mixture sit for about 5–10 minutes, until it becomes foamy.

  2. Add the remaining sugar, egg, evaporated milk, vanilla, melted butter, and salt. Whisk until combined.

  3. Add 3 cups of flour and mix until a soft dough forms. If the dough is extremely sticky, gradually add additional flour, a tablespoon or two at a time. The finished dough should be soft and slightly tacky rather than dry.

  4. Turn the dough onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic. You can also knead the dough with a stand mixer fitted with a dough hook.

  5. Place the dough in a lightly greased bowl, cover, and allow it to rise in a warm place for about 60–90 minutes, or until doubled in size.

Shape the Beignets

  1. Gently punch down the risen dough and transfer it to a lightly floured work surface.

  2. Roll the dough to approximately ¼-inch thickness.

  3. Cut the dough into roughly 3-inch squares. For a more Disney-inspired presentation, you can also use a large Mickey-shaped cookie cutter, although the more intricate shapes may puff less evenly while frying.

  4. Place the cut dough on a parchment-lined baking sheet and loosely cover it with a clean kitchen towel. Allow the beignets to rest for about 15–20 minutes while the oil heats.

Fry the Beignets

  1. Add about 2 inches of vegetable oil to a heavy-bottomed pot or Dutch oven. Heat the oil to 350°F.

  2. Carefully add 2–3 pieces of dough at a time, making sure not to overcrowd the pot.

  3. Fry for approximately 1–2 minutes per side, or until puffed and golden brown.

  4. Remove the beignets with a slotted spoon and place them on a wire rack set over a baking sheet or on paper towels to drain.

Make the Candied Apple Icing

  1. In a medium bowl, whisk together the powdered sugar, milk, corn syrup, green apple flavoring, and vanilla.

  2. Add a few drops of green food coloring and stir until you reach a bright candy-apple color. Add additional milk about ½ teaspoon at a time if needed. The icing should be thick enough to coat the beignet but thin enough to slowly drip down the sides.

Decorate the Beignets
