One of my favorite comfort-food combinations at Disney’s Hollywood Studios is the grilled cheese and tomato soup from Woody’s Lunch Box in Toy Story Land. This Woody’s Lunch Box grilled cheese recipe brings that same warm, cheesy goodness home with layers of melted cheddar and provolone, a creamy cheese filling, and a savory garlic spread, all served alongside a smooth tomato-basil soup that is perfect for dipping. It’s an easy Disney-inspired meal to make whenever you’re craving a little taste of the parks at home.
Cooking Tips
Keep the skillet over medium-low heat so the thick sandwich has enough time to warm through before the bread gets too dark. You can also use a griddle. My favorite is the Chefman XL Electric Griddle. If the bread browns before the cheese melts, lower the heat and cover the skillet for a minute to trap warmth. For an especially smooth soup, blend it thoroughly before adding the cream, and add a small amount of extra broth when reheating if it becomes too thick.

Instructions
Tomato Basil Soup

Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook for 3 to 5 minutes, until softened.

Stir in the garlic and cook for about 30 seconds, just until fragrant.

Add the crushed tomatoes, broth, basil, thyme, sugar, salt, and pepper. Bring the soup to a gentle simmer.

Reduce the heat to low and cook uncovered for 15 to 20 minutes, stirring occasionally.

Carefully blend the soup with an immersion blender until smooth. You can also transfer it to a countertop blender in batches.

Stir in the heavy cream and butter. Warm the soup for another 2 to 3 minutes without bringing it to a boil. Taste and adjust the seasonings as needed.
Grilled Cheese

Make the cream cheese spread by combining cream cheese, Double Gloucester or cheddar, heavy cream, and salt in a food processor. Blend until smooth. Set aside.

Make the garlic spread by combining mayonnaise, garlic, and salt in a small bowl and stirring until blended. Set aside.

Lay out artisan bread slices on parchment paper or a large cutting board.

Place 2 slices of cheddar on 4 of the bread slices. Place 2 slices of provolone on the remaining bread slices.

Equally spoon cream cheese spread on slices with provolone. Gently smooth cream cheese spread over each slice.

Press the cheddar side and the provolone sides together.

Heat a large skillet or griddle over medium heat until hot.

Brush both sides of the sandwiches with garlic spread.

Grill the sandwiches for 2 minutes on each side, until the cheese is melted and the bread is golden brown.
