This EPCOT-inspired Schinkennudeln combines tender noodles, savory ham, onions, and melted cheese in a rich baked pasta gratin inspired by the Germany Marketplace.

  1. Preheat the oven to 375°F. Lightly coat a 9-by-13-inch baking dish with nonstick cooking spray.
  2. Bring a large pot of salted water to a boil. Cook the egg noodles until just al dente, about 1 minute less than the package recommends. Drain well.
  3. Melt the butter in a skillet over medium heat. Add the diced onion and cook for about 4–5 minutes, until softened but not deeply browned. Add the ham and cook for another 2 minutes. Remove from the heat.
  4. In a large bowl, whisk together the heavy cream, eggs, salt, white pepper, and nutmeg.
  5. Combine the Swiss and white cheddar cheeses in a separate bowl. Set aside about 1 cup of the combined cheese for the topping. Stir the remaining cheese into the cream mixture.
  6. Add the hot noodles, ham, and onions to the cream mixture. Gently toss until the noodles are evenly coated.
  7. Transfer the mixture to the prepared baking dish, pressing the noodles into an even layer. Cover tightly with aluminum foil and bake for 30 minutes.
  8. Remove the foil and sprinkle the reserved cheese evenly over the casserole. Return it to the oven uncovered for 15–20 minutes, until the cheese is melted and the top develops the golden-brown patches characteristic of the EPCOT version.
