Heat your oven to 350°F. Generously spray 8 oz ramekins with nonstick cooking spray.

Separate the biscuits and cut each one into four pieces.

In a large zip-top bag or bowl, combine the granulated sugar, cinnamon, and pumpkin pie spice.

Add the biscuit pieces a few at a time and toss until completely coated in the pumpkin-spice sugar. Arrange them loosely in the prepared ramekins, filling them 2/3 of the way. Place the ramekins in a baking dish to prevent spillage.

Melt the butter in a small saucepan over medium-low heat. Add the brown sugar, pumpkin puree, heavy cream, pumpkin pie spice, and salt.
Cook for about 2 to 3 minutes, stirring constantly, until the brown sugar has dissolved and the sauce is smooth. Remove from the heat and stir in the vanilla.

Set aside about 1/3 cup of the pumpkin sauce for serving. Pour the remaining warm sauce evenly over the biscuit pieces.
