The biggest trick is blotting the pumpkin puree. Pumpkin contains a lot of water, and using it straight from the can can turn these into fluffy, cake-like pumpkin cookies rather than the denser, chewier cookies served at Harbor Galley. Also, slightly underbake them. Pull the cookies when the edges look finished, but the centers are still soft. They’ll continue cooking on the hot pan and develop that tender middle. Instructions

Make the Pumpkin Cookies

  1. Remove some moisture from the pumpkin. Spread the pumpkin puree over several layers of paper towels. Place another paper towel on top and gently press. Repeat with fresh paper towels once or twice. You want to remove excess liquid without completely drying out the pumpkin.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  3. Add the blotted pumpkin, egg yolk, and vanilla. Whisk until completely combined.
  4. In a separate bowl, whisk together the flour, cinnamon, ginger, nutmeg, cloves, baking soda, and salt.
  5. Gradually stir the dry ingredients into the pumpkin mixture just until a soft cookie dough forms. Avoid overmixing.
  6. Cover the dough and refrigerate for about 30 minutes. This keeps the cookies from spreading too much while baking.
  7. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  8. Scoop the dough into balls using about 1 1/2 tablespoons of dough per cookie. Place them about 2 inches apart. Gently press the tops just enough to flatten them slightly.
  9. Bake for 9–11 minutes, until the edges are set but the centers still look slightly soft. For the Harbor Galley-style texture, don't wait for the centers to look completely baked.
  10. Let the cookies rest on the baking sheet for about 5 minutes before transferring them to a cooling rack.

Make the Whipped Cream Cheese Dip

  1. Beat the softened cream cheese and powdered sugar until completely smooth.
  2. Add the vanilla and a small pinch of cinnamon.
  3. With the mixer running on medium speed, slowly pour in the cold heavy cream.
  4. Beat for another 1–2 minutes, until the dip becomes light and fluffy.
  5. Transfer to a small serving bowl and dust lightly with cinnamon.
