Inspired by the seasonal Pumpkin Spice Mickey Beignets served at Scat Cat’s Club Café at Disney’s Port Orleans Resort – French Quarter at Walt Disney World, this Pumpkin Spice Mickey Beignets recipe brings one of Disney’s favorite fall treats home. These Mickey-shaped beignets are fried until light, fluffy, and golden, then generously dusted with a sweet pumpkin spice powdered sugar. They’re a fun way to add a little Disney Parks magic to Halloween parties, fall gatherings, or a cozy autumn morning at home.

Cooking Tips

The biggest secret is maintaining the oil at 350°F. If the oil is too cool, the beignets absorb oil and become heavy; if it’s too hot, the outside browns before the center finishes cooking. I like to use a Candy Thermometer to ensure the proper temperature.

Also, don’t skip the second rise. That’s what gives the Mickey shapes their characteristic puffy, airy interior instead of turning them into flat fried dough.

Instructions

Make the Beignet Dough

  1. Add the warm water to a large mixing bowl. Stir in the yeast and 1 tablespoon of the sugar. Let the mixture sit for about 5–10 minutes, until it becomes foamy.

  2. Add the remaining sugar, egg, evaporated milk, vanilla, melted butter, and salt. Whisk until combined.

  3. Add 3 cups of flour and mix until a soft dough forms. If the dough is extremely sticky, gradually add additional flour, a tablespoon or two at a time. The finished dough should be soft and slightly tacky rather than dry.

  4. Turn the dough onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic. You can also knead the dough with a stand mixer fitted with a dough hook.

  5. Place the dough in a lightly greased bowl, cover, and allow it to rise in a warm place for about 60–90 minutes, or until doubled in size.

Shape the Beignets

  1. Gently punch down the risen dough and transfer it to a lightly floured work surface.

  2. Roll the dough to approximately ¼-inch thickness.

  3. Cut the dough into roughly 3-inch squares. For a more Disney-inspired presentation, you can also use a large Mickey-shaped cookie cutter, although the more intricate shapes may puff less evenly while frying.

  4. Place the cut dough on a parchment-lined baking sheet and loosely cover it with a clean kitchen towel. Allow the beignets to rest for about 15–20 minutes while the oil heats.

Fry the Beignets

  1. Add about 2 inches of vegetable oil to a heavy-bottomed pot or Dutch oven. Heat the oil to 350°F.

  2. Carefully add 2–3 pieces of dough at a time, making sure not to overcrowd the pot.

  3. Fry for approximately 1–2 minutes per side, or until puffed and golden brown.

  4. Remove the beignets with a slotted spoon and place them on a wire rack set over a baking sheet or on paper towels to drain.

Make The Pumpkin Spice Sugar

  1. Allow the freshly fried beignets to cool for about 5 minutes. Whisk together the powdered sugar, pumpkin pie spice, and cinnamon in a paper or freezer bag. Set aside.

  2. Place a few beignets in the bag and generously dust them with the pumpkin spice powdered sugar. Don't be shy with it. Mickey beignets should look like they've been caught in a powdered sugar snowstorm.

  3. Serve while the beignets are still slightly warm ♨ and enjoy!
