Pumpkin contains a lot of water, and using it straight from the can can turn these into fluffy, cake-like pumpkin cookies rather than the denser, chewier cookies served at Harbor Galley. Also, slightly underbake them. Pull the cookies when the edges look finished, but the centers are still soft. They'll continue cooking on the hot pan and develop that tender middle. If you're serving them later, microwave each cookie for about 5–8 seconds to bring back the warm, fresh-baked texture. For an even stronger Harbor Galley-style spice flavor, you can increase the cinnamon to 1 1/2 teaspoons. Pumpkin Cookies
1/2cup butter (melted and slightly cooled)
1/2cup packed light brown sugar
1/3cup granulated sugar
1/3cup pumpkin puree
1large egg yolk
1teaspoon vanilla extract
1 3/4cups all-purpose flour
1teaspoon ground cinnamon
1/2teaspoon ground ginger
1/4teaspoon ground nutmeg
1/8teaspoon ground cloves
1/2teaspoon baking soda
1/2teaspoon salt

4ounces cream cheese (softened)
1/3cup powdered sugar
1/2teaspoon vanilla extract
1/3cup cold heavy whipping cream
Pinch of cinnamon, plus more for serving
Instructions
Make the Pumpkin Cookies

Remove some moisture from the pumpkin. Spread the pumpkin puree over several layers of paper towels. Place another paper towel on top and gently press. Repeat with fresh paper towels once or twice. You want to remove excess liquid without completely drying out the pumpkin.

In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.

Add the blotted pumpkin, egg yolk, and vanilla. Whisk until completely combined.

In a separate bowl, whisk together the flour, cinnamon, ginger, nutmeg, cloves, baking soda, and salt.

Gradually stir the dry ingredients into the pumpkin mixture just until a soft cookie dough forms. Avoid overmixing.

Cover the dough and refrigerate for about 30 minutes. This keeps the cookies from spreading too much while baking.

Preheat the oven to 350°F and line two baking sheets with parchment paper.

Scoop the dough into balls using about 1 1/2 tablespoons of dough per cookie. Place them about 2 inches apart. Gently press the tops just enough to flatten them slightly.
