I also like to use Ore Ida crispy tater tots because they remain crisp even when they’re piled under all the sausage gravy. If you cook your eggs on a griddle as I do, you can use some of the leftover bacon grease to give them a bit more flavor.

  1. Prepare 1/2 bag of tater tots according to the package directions.

Sausage Gravy

  1. Cook sausage in a large skillet over MEDIUM-HIGH heat 8 minutes or until thoroughly cooked, stirring frequently. Drain, reserving drippings; place sausage in bowl.

  2. Add flour and pepper to the skillet; stir with a wire whisk until well blended. Cook over MEDIUM heat 6-8 minutes or until browned, stirring constantly. Gradually stir in milk; cook and stir 3-5 minutes or until mixture thickens and comes to a boil.

  3. Add sausage; cook 1-2 minutes or until thoroughly heated, stirring frequently.

Breakfast Totchos

  1. Cook the bacon until it's crispy and then chop it into small pieces.

  2. Cook the scrambled eggs using some of the remaining bacon grease for flavor.

  3. Assemble the breakfast totchos in a bowl. Add a handful of tater tots, a ladle of sausage gravy, chopped bacon, and shredded cheddar cheese. Adjust the layers to your liking!
