Give the cut dough plenty of time to rise before frying, since that final proof helps create the soft, fluffy texture inside. Fry only a few beignets at a time to avoid dropping the oil temperature, and let them drain briefly before adding the toppings. Inspired by Mickey’s Not-So-Scary Halloween Party, these fluffy beignets are served over rich cookies-and-cream cheese icing and finished with powdered sugar and crushed chocolate cookies.
Ingredients

3/4cup warm water (about 105–110°F)
2 1/4teaspoons active dry yeast
1/4cup granulated sugar
1large egg
1/2cup evaporated milk
1teaspoon vanilla extract
3tablespoons butter (melted)
1/2teaspoon salt
3 - 3 1/2cups all-purpose flour
Vegetable or canola oil (for frying)
Cookies and Cream Cheese Icing
4ounces cream cheese (softened)
2tablespoons unsalted butter (softened)
3/4cup powdered sugar
1/2teaspoon vanilla extract
2-3tablespoons milk
3 Oreos (finely crushed)
Topping
1/2cup powdered sugar
4 Oreos (roughly crushed)
Instructions
Make the Beignet Dough

Add the warm water to a large mixing bowl. Stir in the yeast and 1 tablespoon of the sugar. Let the mixture sit for about 5–10 minutes, until it becomes foamy.

Add the remaining sugar, egg, evaporated milk, vanilla, melted butter, and salt. Whisk until combined.

Add 3 cups of flour and mix until a soft dough forms. If the dough is extremely sticky, gradually add additional flour, a tablespoon or two at a time. The finished dough should be soft and slightly tacky rather than dry.

Turn the dough onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic. You can also knead the dough with a stand mixer fitted with a dough hook.

Place the dough in a lightly greased bowl, cover, and allow it to rise in a warm place for about 60–90 minutes, or until doubled in size.
Shape the Beignets

Gently punch down the risen dough and transfer it to a lightly floured work surface.

Roll the dough to approximately ¼-inch thickness.

Cut the dough into roughly 3-inch squares. For a more Disney-inspired presentation, you can also use a large Mickey-shaped cookie cutter, although the more intricate shapes may puff less evenly while frying.

Place the cut dough on a parchment-lined baking sheet and loosely cover it with a clean kitchen towel. Allow the beignets to rest for about 15–20 minutes while the oil heats.
Fry the Beignets

Add about 2 inches of vegetable oil to a heavy-bottomed pot or Dutch oven. Heat the oil to 350°F.

Carefully add 2–3 pieces of dough at a time, making sure not to overcrowd the pot.

Fry for approximately 1–2 minutes per side, or until puffed and golden brown.

Remove the beignets with a slotted spoon and place them on a wire rack set over a baking sheet or on paper towels to drain.
Make The Cookies and Cream Cheese Icing

Allow the freshly fried beignets to cool for about 5 minutes. Beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla, then beat in enough milk to create a thick but spreadable icing. Fold in the finely crushed chocolate cookies. Refrigerate until ready to serve.

While the beignets are still warm, generously dust them with powdered sugar.

Spread a generous layer of cookies and cream cheese icing across the serving plate. Arrange the warm beignets over the icing, then finish with additional powdered sugar and roughly crushed chocolate cookie pieces. Serve while the beignets are still slightly warm ♨ and enjoy!
