Description

The Tony's Town Square Restaurant Shrimp Scampi is a fan favorite and the perfect comfort food.

Ingredients
  • 1 lb jumbo shrimp (peeled and deveined)
  • 1/2 cup dry white wine
  • 3 tbsp butter
  • 2 tbsp extra virgin olive oil
  • 4 garlic cloves (minced)
  • 1 tbsp fresh lemon juice (about 1/2 lemon)
  • lemon zest (1/2 lemon)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp parsley
  • 1/3 cup grated parmesan cheese (optional)
Instructions
  1. Fill a large pot with salted water and bring to a boil. Add the pasta of your choice, cooking until al dente according to package instructions.
  2. Reserve about half a cup of the pasta water, then drain the pasta and set it aside.

  3. Prepare one pound of jumbo shrimp by washing and drying them on paper towels. This will help them to not get mushy.

  4. In a large skillet over medium-high heat, add 2 tablespoons of butter and 2 tbsp extra virgin olive oil. Once the butter is melted and begins to bubble, stir in 4 cloves of minced garlic. Let it cook for about 30 seconds.

  5. Add the shrimp in a single layer. Cook the shrimp for 2–3 minutes on one side, until they turn pink. Flip them and cook for another 2–3 minutes. Once the shrimp is opaque and cooked through, remove them from the skillet and set aside.

  6. In the same skillet, pour in 1/2 cup dry white wine. Let the wine simmer and reduce for about 2 minutes, until slightly thickened. Stir in 1 tablespoon of butter, 1 tbsp lemon juice, and lemon zest from half a lemon. Add a pinch of salt and pepper.

  7. Add the pasta water and some parmesan cheese which is optional.

  8. Add the drained pasta to the pot and pour in the shrimp and sauce. Then add in 1 tablespoon of parsley. Mix until everything is well incorporated and the sauce is distributed throughout.

  9. Serve hot with your choice of vegetables and garlic bread ♨ and enjoy!
