This recipe is best cooked in an Instant Pot. The pressure cooker will make the meat tender and fall off the bone. I was able to pull the bone right out when it was done. You can also make this in the crock pot if you don’t have an Instant Pot. A pork butt in a crock pot typically takes 8-10 hours on low or 4-6 hours on high, depending on the size of the roast and your slow cooker’s settings. The best way to know it’s done is when the meat is fork-tender and easily shreds.

Mix together the BBQ rub ingredients in a bowl and set aside.

Mix together the BBQ Sauce ingredients in another bowl and set aside.

Rub BBQ rub over pork pieces, making sure all pieces are fully covered.

Place pork in an Instant Pot and pour 1 ½ cups of BBQ sauce and liquid smoke in the insert. Cover and cook on high pressure for 60 minutes.

After 60 minutes, allow the Instant Pot to naturally release for 10-15 minutes. Quick release the remaining pressure.

Remove pork pieces from Instant Pot and shred.
