1cup cake flour (or all-purpose flour)
3/4cup bread flour
2 1/4tsp baking soda
2 1/4tsp nutmeg
2 1/4tsp ground cinnamon
2 eggs
1cup sugar
1cup canned pumpkin puree
1/4cup water
1/4cup vegetable oil (plus 2 Tbsp)
1/2cup raisins
Instructions
Preheat oven to 350°F. Spray a 9x5x3-inch loaf pan with nonstick spray or coat with butter and set aside.
Whisk together cake flour (or all-purpose flour), bread flour, baking soda, nutmeg, and cinnamon in a large bowl.
In a separate bowl, whisk together eggs, sugar, pumpkin puree, water, and oil. Add dry ingredients to wet ingredients and mix until combined. Fold in raisins.
Pour batter into prepared loaf pan. Bake for 45 to 50 minutes, or until a wooden pick or cake tester inserted in the middle comes out clean.
Turn loaf out of pan onto a wire rack to cool for at least 10 minutes before eating (if you can wait that long)!
