While this recipe calls for sliced potatoes, you can use diced potatoes if you don't have a mandoline. If you want to buy a mandoline, I suggest the KitchenAid Fresh Prep Slicer/Shredder from Amazon. You can also customize this recipe to your liking. I added more cheddar cheese and a bit less cream. It's also important to use Kosher salt because it adds more to the flavor. This is a great dish for a potluck breakfast, it serves 6 but you can double it to feed a larger crowd.

Ingredients
'Ohana Breakfast Potatoes Ingredients
2lb potatoes (sliced)
2/3cup cheddar cheese (shredded)
4tbsp parmesan cheese (grated)
1/4cup onion (diced)
1tsp kosher salt
1/4tsp black pepper
Instructions
Slice the potatoes using a mandoline. Place a layer of potato slices and onion in a buttered 8x8 dish.
Sprinkle with half of the cheese and salt and pepper.
Repeat layers and then pour cream over the potatoes.
Bake at 350 for 1 hour and then let stand 5 minutes.
Serve hot ♨ and enjoy!
