Bring the comforting flavors of Magic Kingdom home with this Liberty Tree Tavern Pennsylvania Pot Roast recipe! Served as part of the family-style Patriot's Platter at Liberty Tree Tavern in Walt Disney World, this tender, slow-cooked beef is one of my favorite examples of classic American comfort food. This easy copycat recipe recreates those rich, savory flavors with juicy chuck roast, onions, herbs, and a delicious homemade beef gravy. Whether you make it in the slow cooker or Instant Pot, it's a wonderful addition to a cozy family dinner, Sunday supper, or Disney-inspired Thanksgiving feast!
Cooking Tips
For the best Liberty Tree Tavern Pennsylvania Pot Roast, choose a well-marbled chuck roast, which becomes incredibly tender as it cooks. Searing the beef before cooking adds a rich, savory flavor, so don't skip this step! If using an Instant Pot, cut the roast into 3–4 large pieces for even cooking, use 2 cups of beef broth, and allow 15–20 minutes for natural pressure release to keep the meat juicy. If using a slow cooker, cook on LOW for 8–10 hours for the most tender results, and avoid lifting the lid during cooking. For either method, the beef should shred easily with a fork when it's done. Don't throw away those flavorful cooking juices! Use them to make a delicious homemade gravy that's perfect for spooning over the pot roast and creamy mashed potatoes. You can also prepare this recipe a day ahead and gently reheat the beef in its cooking juices for an easy family dinner.

Recreate Liberty Tree Tavern's Pennsylvania Pot Roast at home with tender chuck roast, savory herbs, onions, and rich beef gravy, made easily in your Instant Pot or slow cooker for a comforting family dinner.
Ingredients
For the Pot Roast
3lb boneless beef chuck roast
2tablespoons olive oil
2tablespoons butter
1large yellow onion, sliced
3garlic cloves, minced
2cups beef broth
1tablespoon Worcestershire sauce
1tablespoon tomato paste
1teaspoon kosher salt
½teaspoon black pepper
1teaspoon dried thyme
½teaspoon dried rosemary
2 bay leaves
For the Gravy
2tablespoons cold water
1tablespoon cornstarch
2cups strained pot roast cooking liquid
Salt and pepper, to taste
Instructions
1
Pat the chuck roast dry with paper towels and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the roast for 3–4 minutes per side until deeply browned. Remove and set aside.
2
Reduce heat to medium. Add butter and sliced onions and cook for 5 minutes until softened. Stir in the garlic and tomato paste and cook for another minute.
3
Pour in the beef broth and Worcestershire sauce, scraping up the browned bits from the bottom of the skillet. Add thyme, rosemary, and bay leaves. Simmer for 5 minutes.
4
Transfer the broth mixture to an Instant Pot or slow cooker. Add the chuck roast, placing the pieces on top of the onions.
5
Select Pressure Cook (or Manual) and cook on HIGH pressure for 60 minutes in an instant pot or 8-10 hours on low in a slow cooker.
6
Allow the pressure to release naturally for 15–20 minutes before carefully releasing any remaining pressure according to your Instant Pot's instructions.
7
Remove the roast and transfer it to a cutting board. Let it rest for 5–10 minutes before shredding into large pieces with two forks. The beef should be tender enough to pull apart easily. If it's still tough, pressure cook for another 10–15 minutes.
8
Strain the cooking liquid, reserving the onions if desired, and skim off excess fat.
9
In a small bowl, combine 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry.
10
Gradually whisk the slurry into approximately 2 cups of the cooking liquid. Simmer for 3–5 minutes, stirring frequently, until thickened. Season with salt and pepper to taste.
11
Arrange the shredded Pennsylvania Pot Roast over creamy mashed potatoes and generously spoon the warm gravy over the top. Garnish with fresh parsley, if desired.
