A creamy, smoky copycat of Flame Tree Barbecue’s pulled pork macaroni and cheese from Disney’s Animal Kingdom.
Ingredients
Macaroni and Cheese
16oz elbow macaroni
4Tbsp butter
1/4cup all-purpose flour
2.5cups whole milk
1/2cup heavy cream
1tsp yellow mustard
1/2tsp garlic powder
1/2tsp onion powder
1/2tsp smoked paprika
1/2tsp salt
1/4tsp black pepper
2cups sharp cheddar cheese (shredded)
1cup monterey jack cheese (shredded)
Toppings
3cups pulled pork
1cup coleslaw
24 onion rings
1/2cup barbecue sauce
Instructions
Macaroni and Cheese

Bring a large pot of salted water to a boil. Cook the macaroni according to the package directions until just al dente. Drain and set aside.

While the pasta cooks, melt the butter in a large saucepan over medium heat.

Whisk in the flour and cook for about one minute, stirring constantly. The mixture should look smooth and lightly bubbling, but should not brown.

Slowly pour in the milk and heavy cream, whisking constantly to prevent lumps.

Stir in the mustard, garlic powder, onion powder, smoked paprika, salt, and black pepper.

Continue cooking for four to six minutes, stirring frequently, until the sauce thickens enough to coat the back of a spoon.

Reduce the heat to low. Add the cheddar and Monterey Jack a handful at a time, stirring until each addition melts before adding more.
