Cooking Tips
You will need a hand mixer to mix the eggs and sugar. I like the Hamilton Beach 6-Speed Electric Hand Mixer with Whisk. But, don't use the hand mixer to mix in the dry ingredients or you will spray flour everywhere! Don't ask me how I know. The original recipe asked for dark brown sugar but I substituted light brown sugar and it was really good! You can also adjust the amount of sugar or use a sugar alternative, like stevia.

2cups all-purpose flour
2tsp baking soda
2tsp cinnamon
1tsp nutmeg
2cups sugar
3 eggs (large)
1/2cup vegetable oil
5oz pumpkin puree
Streusel
2tbsp all-purpose flour
2tbsp sugar
2tbsp brown sugar (packed)
1/2tsp cinnamon
1pinch salt
2tbsp butter (cold)
Instructions
Prepare a muffin pan by placing paper liners into each muffin cup. Preheat the oven to 375°F.
Combine the all-purpose flour, baking soda, cinnamon, and nutmeg into a large bowl and whisk to combine. Set aside.
Using an electric mixer, beat together sugar and eggs until pale yellow. Add the oil and pumpkin and mix until smooth.
Add half of flour mixture into egg mixture and mix with a spoon until just combined. Scrape the sides of bowl, and add the remaining flour mixture to batter. Mix until it's all combined.
Using a large scoop, pour the batter into prepared muffin pan, filling each muffin cup about 3/4 full.
Add flour, sugar, brown sugar, cinnamon, and salt to a bowl. Chop the butter into small pieces and add to the bowl. Mash using a fork until well combined.
Sprinkle the streusel on each muffin, each will take approximately 1 teaspoon.
Bake 18 minutes, then lower oven temperature to 325°F and bake 5 minutes more or until golden brown.
Serve immediately with butter ♨ enjoy!
