The Disneyland Jolly Holiday combo is an iconic Disney food. This pairing of a perfect grilled cheese and tomato soup is the ultimate comfort food.
Ingredients
Tomato Soup Ingredients
1tbsp olive oil
2clove garlic
28oz diced tomatoes
28oz crushed tomatoes
3cup chicken broth
1tbsp sugar
1tsp italian seasoning
.5tsp onion powder
1tsp basil
.25cup sundried tomatoes (chopped)
1tbsp sundried tomato oil
1cup whipping cream
Grilled Cheese Ingredients
1 sourdough bread (loaf)
1lb cheddar cheese
1lb white cheddar cheese
1stick butter
Instructions
In a large stockpot, heat olive oil over medium heat. Add the garlic and sauté for 30-60 seconds until fragrant.
Add in the chicken stock, crushed tomatoes, diced tomatoes, sugar, salt, pepper, Italian seasoning, and onion powder to the pot. You can also blend the diced tomatoes before adding them to the pot for a smoother consistency.
Allow the soup to simmer for 10 minutes, stirring occasionally.
Add basil and 1 tbsp sundried tomato oil to the soup. Finely dice and add in 1/4 cup of the sun dried tomatoes.
Add 1 cup of whipping cream and simmer for 10 minutes.
While the soup is simmering, assemble and make the grilled cheese. Butter one side of the sourdough bread and place it on the griddle. Layer on the medium cheddar and white cheddar cheese to taste. Top with another piece of bread buttered on the outside. Cook until golden brown.
Serve hot with tomato basil soup ♨ and enjoy!
