Line a baking sheet with parchment paper to prevent the toffee from sticking.

In a medium-sized saucepan over medium heat, melt the unsalted butter. Stir in the granulated sugar and vanilla extract until well combined.

Continuously stir the mixture and bring it to a boil. Use a candy thermometer to monitor the temperature and cook until it reaches the soft crack stage (around 270-290ยฐF or 132-143ยฐC).

Once the mixture reaches the desired temperature, remove the saucepan from heat. Quickly pour the toffee mixture onto the prepared baking sheet, spreading it evenly with a spatula. Let it sit for about 20 minutes or expedite the process by putting it in the refrigerator.

In a separate bowl, melt the white chocolate chips using a double boiler or microwave, stirring at 20-second intervals until smooth.
