I'll take you through a step-by-step guide on making the beloved Disneyland Chimichanga recipe right at home.
This is a great recipe to make using the Instant Pot. Just brown the beef, then assemble all of the ingredients in the instant pot. Pressure cook it for at least 50 minutes depending on the amount of beef. The chimichanga filling also freezes beautifully in an airtight container for up to 3 months. If you do not have an Instant Pot, you can make your beef in the crockpot. Brown the beef in a skillet and then all of the ingredients to a crockpot. Disneyland Chimichangas are an iconic Disney food. Made with chuck roast and spices, this dish is incredibly indulgent and delicious.
Cut the chuck roast into 3 chunks. Mix together all the seasoning for the beef. Sprinkle the seasoning over the beef pieces and pat in completely.
Using Instant Pot saute mode, heat some oil and brown the beef on all sides.
Add in the onion and water to the Instant Pot with the browned beef. Cover and let it come up to pressure and cook for 50-60 minutes.
When it's done, let the pressure come down naturally or use quick release.
Remove the beef and shred with a fork. Set the beef mixture aside while you assemble the chimichangas.
In a large stock pot or deep frying pan add in vegetable or canola oil to 350 degrees. You only need a few inches as you don’t want to completely submerge the chimichanga. If your chimichanga floats a little bit, reduce the amount of oil you're using.
Lay out your tortilla and add in a few spoonfuls of the meat and onion mixture. Add in the amount of cheese you want, I use about 1/3 cup. Be careful not to over fill or it will be hard to roll. Fold the sides of the tortilla inward. Roll it up tightly to form a chimichanga.
Carefully add the chimichangas to the hot oil, a few at a time, and fry until golden brown and crispy, turning occasionally to ensure even cooking. This should take about 2-3 minutes per batch. Once cooked, transfer the chimichangas to a paper towel-lined plate to drain any excess oil.
