The only learning curve with this recipe is wrapping and frying the chimichangas. Don’t fill them too much or they will break apart when you try to fry them. Also, make sure your oil is not too hot or they will burn. I put mine on medium and they turned out really well. The oil should cover half of the chimichanga and then you flip them when they’re golden brown. Don’t wait too long or they will burn on the bottom. It’s even better if you have a deep fryer at home. Once you get comfortable with making the breakfast chimichanga, you can try out other fried recipes such as the Cheeseburger Spring Rolls and Pepperoni Spring Rolls!
Do not skimp on the tomatillo or green salsa. This is what takes these breakfast chimichangas to the next level! You can often find green salsa at your local grocery store.

Breakfast chimichangas are delicious and easy to make for a hearty breakfast. Made with eggs, bacon, potatoes, and cheese, this dish is indulgent and delicious.

Boil a pot of water and add the potatoes. Boil for 15-20 minutes until tender. When the potatoes are done, dice them into small pieces.

Make the bacon using a griddle, skillet, or oven. Chop the bacon into small pieces.

Scramble and cook the eggs using some of the bacon grease to add flavor.

Add the diced potatoes, bacon pieces, and scrambled eggs to a bowl and mix until well combined.

Place a tortilla on a clean surface. Add approximately 1/2 cup of filling and fold the sides of the tortilla inward. Roll it up tightly to form a chimichanga.

Heat vegetable oil in a deep fryer or a large, deep skillet to approximately 350°F (175°C).

Carefully add the chimichangas to the hot oil, a few at a time, and fry until golden brown and crispy, turning occasionally to ensure even cooking. This should take about 2-3 minutes per batch. Once cooked, transfer the chimichangas to a paper towel-lined plate to drain any excess oil.
