Preparing the Marinade

For this marinade, you can either make your own Teriyaki Sauce or use store bought. I like to make my own sauce and it is useful in other recipes including Chicken Teriyaki from Katsura Grill. Add in the ingredients for the Bengal Sauce and whisk them together until the mixture is well blended and the brown sugar is fully dissolved. Heat the marinade in a sauce pot and add a cornstarch slurry to thicken the sauce.

Grilling the Skewers

Before you start grilling, if you are using wood skewers, it is important to soak them fully in water for at least 30 minutes. This will help avoid them catching fire while you’re grilling. I also like to use two skewers so they’re easier to flip on the grill.

Alternatives To Grilling

You can also bake the skewers in the oven. Wood skewers are safe to use in the oven but again, you must soak them in water for at least 30 minutes first. Heat your oven to 375 degrees and turn the skewers halfway through cooking. Grilling is the preferred method to accurately copy the Bengal Barbeque taste but they will also taste great when cooked in the oven.

  • Sirloin Steak
  • Teriyaki Sauce (homemade or store bought)

You can freeze the steak but I suggest you remove the skewers first. You could also freeze the uncooked marinated steak, then thaw and grill the skewers.
