The oil should cover half of the spring roll and then you flip them when they're golden brown. Don't wait too long or they will burn on the bottom. It's even better if you have a deep fryer at home.

Reuben Spring Rolls are delicious and easy to make for a quick lunch, dinner or a satisfying snack. Made with deli corned beef, cheese, sauerkraut, and spring roll wrappers, this dish is the perfect transformation of a Rueben sandwich in egg roll form.
Place a spring roll wrapper on a clean surface, with one corner pointing toward you. Layer cheese, corned beef, and sauerkraut onto the center of the wrapper, leaving a small border around the edges.
Begin rolling the spring roll by folding the bottom corner up over the filling, tucking it in tightly. Fold in the side corners and continue rolling until you reach the top corner. Moisten the top corner with a little water to seal the spring roll.
Repeat the process with the remaining spring roll wrappers and filling.
Heat vegetable oil in a deep fryer or a large, deep skillet to approximately 350°F (175°C).
