Cooking Tips
The only learning curve with this recipe is wrapping the spring rolls. Don't fill them too much, or they will break apart when you try to fry them. Also, make sure your oil is not too hot, or it will burn. I put mine on medium, and they turned out really well. You should make sure the oil is at 350°F degrees so the spring rolls cook evenly. I like to use a candy thermometer to ensure the temperature stays at 350°F. The oil should cover half of the spring roll, and then you flip them when they're golden brown. Don't wait too long, or they will burn on the bottom. It's even better if you have a deep fryer at home. Once you get comfortable with making spring rolls, you can try out other fillings such as the Cheeseburger Spring Rolls!
The ingredients for this recipe include:
Egg Roll Wrappers
Pepperoni Slices (I highly suggest Boar's Head!)
Shredded Mozzarella Cheese
Vegetable or canola oil for frying (be sure to reuse your oil for sustainability!)
(Optional) Marinara Sauce for dipping

Pepperoni Spring Rolls are delicious and easy to make for a quick lunch, dinner or a satisfying snack. Made with pepperoni, mozzarella cheese, and spring roll wrappers, this dish is indulgent and delicious.
Ingredients
40 pepperoni slices
8oz mozzarella cheese
8 egg roll wrappers
1-2cup vegetable oil (for frying)
marinara sauce (for dipping)
Instructions
1
Chop the pepperoni into small pieces. Place a spring roll wrapper on a clean surface, with one corner pointing toward you. Place a small handful of pepperoni and mozzarella in the center of the wrapper, leaving a small border around the edges.
2
Fold the bottom corner up and over the filling, then fold in the left and right sides. Roll tightly toward the top corner, keeping the filling tucked inside. Brush the top corner with a little water to seal the spring roll. Repeat with the remaining wrappers and filling.
3
Heat 1-2 cups of vegetable or canola oil to 350 degrees in a deep skillet. The oil should cover half of the spring roll. Place spring rolls in the skillet and fry for 2-3 minutes on each side.
4
Transfer the spring rolls to a plate lined with paper towels to remove the excess oil.
5
Serve warm with marinara dipping sauce ♨ and enjoy!
