Description

Le Cellier Cheddar Cheese Soup is a delicious comfort food that is perfect for a cold winter night. Adjust the ingredients to customize this recipe for your palate and create the perfect soup.

Instructions

  1. Cook the bacon until it is crispy. Save the bacon grease and crumble the bacon.

  2. In a large pot, add the bacon grease, butter, and celery.  Saute over medium heat until celery softens, about 5 minutes.

  3. Slowly whisk in the flour and stir constantly for about 4 minutes.

  4. Gradually add the chicken stock and bring to a boil, whisking constantly.

  5. Reduce heat to medium, add milk and beer, and simmer for 15 minutes.

  6. Remove from the heat and mix in the cheese, Tabasco sauce, and Worcestershire sauce. Add the bacon, saving some for garnish.

  7. Serve hot with pretzel bread ♨ and enjoy!
