If you’ve ever wandered through New Orleans Square at Disneyland, the aroma of freshly made beignets might have drawn you in. But, tucked away in the exclusive and elusive Club 33 lies an even more magical treat: Pumpkin Beignets! These seasonal delights combine the light, fluffy texture of traditional beignets with the rich, warm flavors of fall. While access to Club 33 may be limited, the good news is that you can recreate this magical experience in your own kitchen with this Disney Club 33 Pumpkin Beignets recipe.
Cooking Tips
You will need a standing mixer with a dough hook to make these beignets. I like the Hamilton Beach Stand Mixer. You will also need a Mickey Mouse Cookie Cutter. If you don't have one, you can just cut the beignets into square shapes. I also used a Candy Thermometer to ensure that the cooking oil stayed at 350 degrees Fahrenheit which helped the Mickey beignets to cook evenly.

Pumpkin beignets are an iconic Disney food that make a perfect breakfast or snack.
Ingredients
Ingredients
1/2teaspoon dry yeast
1/4cup warm water (105°)
4cups all-purpose flour
1cup pumpkin puree (canned)
1/4cup sugar
1/4cup heavy cream
1/4cup boiling water
1 egg (large)
2tablespoons vegetable shortening
1/2teaspoon salt
vegetable oil for frying
Maple Glaze Ingredients
3Tbsp butter (salted)
1/4cup maple syrup
1cup confectioner's sugar
Instructions
Sprinkle yeast over warm water in a small bowl, stirring to dissolve. Let stand for 5 minutes.
Combine flour, pumpkin puree, sugar, heavy cream, hot water, egg, shortening, and salt in a large bowl; stir in yeast mixture. Mix dough just until combined and smooth. Let dough rest in bowl, covered with a clean kitchen towel, 30 minutes.
On a floured surface, roll to 1/4-inch thickness and cut individual beignets with a Mickey Mouse-shaped cutter or cut into 2 1/2 to 3-inch squares. Cover with a towel and let dough rise until doubled in size in a warm, draft-free area, about 1 to 1 1/2 hours.
Using caution, heat 3 inches of vegetable oil to 350°F in a deep, heavy pot over medium-high heat. Fry beignets until golden brown, about 2 to 3 minutes, turning as soon as they brown on one side. Remove with tongs and place on paper towels to drain.
Make the maple glaze by combining butter and maple syrup in a medium microwave-safe bowl. Microwave until butter melts. Whisk in powdered sugar until smooth.
Drizzle warm beignets with maple glaze and serve immediately ♨ enjoy!
