The only learning curve with this recipe is wrapping the spring rolls. Don't fill them too much or they will break apart when you try to fry them. Also, make sure your oil is not too hot or they will burn. I put mine on medium and they turned out really well. The oil should cover half of the spring roll and then you flip them when they're golden brown. Don't wait too long or they will burn on the bottom. It's even better if you have a deep fryer at home.

Description
Chicken Cordon Bleu Spring Rolls are delicious and easy to make for a quick lunch, dinner or a satisfying snack. Made with chicken breast, deli ham, cheese, and spring roll wrappers, this dish is the perfect fusion of Asian and French cuisines.
Ingredients
1lb chicken breast
1/2lb deli ham
1/2lb swiss or havarti cheese
1-2cup vegetable oil (for frying)
12 egg roll wrappers
Instructions
Add the chicken breast to the Instant Pot with 1/2 cup of water. Pressure cook for about 10 minutes until no longer pink.
Shred the chicken breast with forks or a hand mixer.
Place a spring roll wrapper on a clean surface, with one corner pointing toward you. Layer cheese, ham, and chicken onto the center of the wrapper, leaving a small border around the edges.
Begin rolling the spring roll by folding the bottom corner up over the filling, tucking it in tightly. Fold in the side corners and continue rolling until you reach the top corner. Moisten the top corner with a little water to seal the spring roll.
Repeat the process with the remaining spring roll wrappers and filling.
Heat vegetable oil in a deep fryer or a large, deep skillet to approximately 350°F (175°C).
Carefully add the spring rolls to the hot oil, a few at a time, and fry until golden brown and crispy, turning occasionally to ensure even cooking. This should take about 2-3 minutes per batch. Once cooked, transfer the spring rolls to a paper towel-lined plate to drain any excess oil.
Serve hot with Ken's Honey Mustard sauce for dipping ♨ and enjoy!
