You do not need to purchase extra clam juice to make this recipe. Just drain the juice from the canned clams and that should be enough. I also changed the original recipe to use 2 cups of clams instead of 1 cup because I like my chowder full of clams. You can adjust any ingredients to suit your tastes!

Instructions

  1. Melt butter in a saucepan; add flour to create a roux.

  2. Cook over medium until it's light brown in color; set aside.

  3. In another pot, heat oil. Saute potatoes, onions, peppers over medium until tender (about 10 minutes).ย 
  4. Drain canned clams and preserve the clam juice. Add clam juice to the potato/pepper mixture and bring to a boil.ย 

  5. Reduce heat and simmer for 10 minutes or until potatoes are cooked.

  6. Add heavy cream, clams, spices and the roux.

  7. Whisk well to blend in the roux.

  8. Bring to a boil, then reduce heat and simmer for about 5 minutes, stirring occasionally.

  9. Serve in a bread bowl or with a baguette โ™จ and enjoy!
